- 1 medium sized pineapple, peeled and cored
- 1 sweet red pepper, sliced
- 1 small red onion, sliced
- 12 cherry tomatoes, halved
- 1 red chilli
- Heat a griddle pan to medium-high.
- Slice the pineapple flesh into small chunks and add to the griddle pan.
- Dry fry the pineapple chunks until charred, turning occasionally.
- Add the charred pineapple and other salsa ingredients to ingredients to a food processor and pulse until well combined.
- Season with salt and enjoy!
